Typical aromas of compote fruit (marasca, cherries and red plums) on spicy, coffee and balsamic notes. Matured 18 months in large slavonic oak botti, with an average age of 5 years. 10-15% of the wine in new oak barrels.
Valpolicella Classico DOC is best served with fresh pasta all uovo with duck ragù, rabbit with prune, risotto with Amarone wine, pasta and fasòi (pasta with black-eyed beans stewed with garlic, celery, onion and carrot, tomato and pork skin), hard cheese like Grana Padano and Parmigiano-Reggiano.
